WThis is an easy version of a beverage featured on our latest drinks list. It's a large-volume premix which is packed full of tastes of the holiday season, making it perfect for a celebration. Save the extra citrus syrup you can use for morning drinks, desserts, or for more rounds of the drink.

The Bikini Cocktail

Yields 10 people

For the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Drink (yields 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

Making the Syrup: Place all the ingredients into a saucepan, heat until it reaches a gentle boil, mixing to dissolve. Next, remove from the burner and leave to cool entirely. Pour into an sterilised bottle, close it and refrigerate it in the fridge, where it will keep for about a month.

To make Premix: Combine all the liquid ingredients into a sizeable container, allow it to infuse for 60 minutes, then strain best through a fine cloth, making it perfectly clear.

When ready to serve: Pour 85ml from the batch mix into your cocktail shaker packed with ice, and stir carefully for one minute to cool it down. Pour into a chilled martini glass or a similar vessel, garnish with the cranberries adding the final touch by giving it a light spray of mandarin oil over the top.
